And I will have none of the obvious jokes.

Here is the recipe:

Mannheimer Apfelkuchen

For base: 225g plain flour, 1 egg, 75g sugar, a few drops vanilla extract (or a packet of Vanillasugar), a pinch of salt, 150g butter or margerine.

For the topping: 800g apples after peel and core, juice of a lemon, 45g sugar, 1 teaspoon cinamon

Additionally: 3 egg yolks, 100g sugar, 100g ground almonds, 180g whipping cream

Preparation of base:

    1. Put the flour in a bowl, with your hands (washed) make a valley and add the egg.
    2. Cover the egg with sugar, vanila extract and salt.
    3. Add the butter in little pieces and knead until the dough is smooth.
    4. Cover and rest in the fridge for 30 minutes.

Meanwhile, the topping:

    1. Preheat the oven to 220 degrees Celsius.
    2. While the dough is in the fridge, peel and quarter the apples and remove the cores.
    3. Slice the apple-quarters lengthwise and add the lemonjuice.
    4. Mix so the apples don’t turn brown.
    5. In a little bowl mix the sugar and cinamon.
    6. When the dough has rested press it into a springform-pan, pulling the dough as high along the edges as possible.
    7. Fill the form with a layer of apple-slices, arranging them like fish-scales.
    8. Dust with the sugar-cinamon mix and add next layer. repeat until you run out of apple.
    9. Put the whole thing into the oven for 25 minutes.

While you are waiting:

    1. In a bowl mix the egg-yolks and the sugar, whisking the mixture until creamy.
    2. Add the ground almonds and the cream and whick lightly.
    3. When the cake has baked for 25 minutes, remove it from the oven and pour the cream-mixture onto the cake and bake for another 20 minutes.

Remove the cake from the form and let it cool.

Serve with a dusting of icing sugar and whipped cream, or custard, or vanilla ice-cream or all of them.

We had half the cake left on Saturday, but that has been consumed on Sunday. I am told that it was quite nice, and I enjoyed it, too.

I’ll make one the next time we meet.
