I made am making Apple Cake. Recipe and photo to follow later.
And I will have none of the obvious jokes.
Here is the recipe:
Mannheimer Apfelkuchen
For base: 225g plain flour, 1 egg, 75g sugar, a few drops vanilla extract (or a packet of Vanillasugar), a pinch of salt, 150g butter or margerine.
For the topping: 800g apples after peel and core, juice of a lemon, 45g sugar, 1 teaspoon cinamon
Additionally: 3 egg yolks, 100g sugar, 100g ground almonds, 180g whipping cream
Preparation of base:
- Put the flour in a bowl, with your hands (washed) make a valley and add the egg.
- Cover the egg with sugar, vanila extract and salt.
- Add the butter in little pieces and knead until the dough is smooth.
- Cover and rest in the fridge for 30 minutes.
Meanwhile, the topping:
- Preheat the oven to 220 degrees Celsius.
- While the dough is in the fridge, peel and quarter the apples and remove the cores.
- Slice the apple-quarters lengthwise and add the lemonjuice.
- Mix so the apples don’t turn brown.
- In a little bowl mix the sugar and cinamon.
- When the dough has rested press it into a springform-pan, pulling the dough as high along the edges as possible.
- Fill the form with a layer of apple-slices, arranging them like fish-scales.
- Dust with the sugar-cinamon mix and add next layer. repeat until you run out of apple.
- Put the whole thing into the oven for 25 minutes.
While you are waiting:
- In a bowl mix the egg-yolks and the sugar, whisking the mixture until creamy.
- Add the ground almonds and the cream and whick lightly.
- When the cake has baked for 25 minutes, remove it from the oven and pour the cream-mixture onto the cake and bake for another 20 minutes.
Remove the cake from the form and let it cool.
Serve with a dusting of icing sugar and whipped cream, or custard, or vanilla ice-cream or all of them.

We had half the cake left on Saturday, but that has been consumed on Sunday. I am told that it was quite nice, and I enjoyed it, too.
I’ll make one the next time we meet.
